On the days when I'm charged with cooking dinner after a busy day of
homeschooling and just being a mom, I need all the help I can get, since cooking
is not my strong suit.  So, I keep handy a few easy recipies that make cooking
quick and fun -- for me and the children.  I thought I'd share a few with you.  
And if you have a fast and easy recipe to share, I'd love to hear from you.  As I
said,  I need all the help I can get.  And together, we can share them with others.
Creamy Rice and Chicken
Ingredients:
1 to 1.5 lbs boneless skinless chicken breast strips
1 cup Minute Rice
1 can each of cream of chicken and cream of mushroom soups
1 cup water
Preparation:
Prep time is about 10 minutes; cook time 1 hour.
Mix rice, soups, and water together in large mixing bowl.  Line a 13" x 9" baking dish with tin foil (makes cleanup
easier).  Lay the chicken in the dish side by side.  Pour the soup mixture over the top to cover the chicken
completely.  Cover and back at 350 degrees for 1 hour.  Serve with salad and hot bread and butter.  Enjoy!
Beefy Macaroni & Cheese
Ingredients:
1 lb ground beef
1 box Kraft Mac and Cheese (No, I don't make it from scratch.  Remember, the trick is to be fast and easy.)
Preparation:  Total time required is 15-20 minutes.   
Cook and drain the ground beef and set aside.(Make sure as you cook it you break it into the smallest pieces
possible.)  While that's cooking, follow the directions for making the macaroni.  When done, add the beef mixture
to the macaroni and cheese, stirring well.  You may wish to let it simmer on low for about 5 minutes before
serving.  Serve with salad and hot bread and butter.  Enjoy!
Diane's Quickie Lasagne
Ingredients:
1 box no-boil lasagne
15 oz ricotta cheese
3-4 cups mozorella shredded cheese (I like to use extra)
26 ox jar of Classico Four Cheese sauce (or any flavor you like)
Preparation: Prep Time is about 15 minutes; cook time is 1 hour
Pour just enough sauce in the bottom of an 9" x 9" baking dish.  Then place a layer of lasagne noodles on top.  
Then top the noodles with a layer of ricotta cheese.  Then place a layer of mozerella cheese on top of that.  Pour a
layer of sauce over the mozerella cheese.  Continue with this layering (usually 3 layers).  Lastly sprinkle with
mozerella cheese over the top of the final layer.  Cover and back for 1 hour at 350 degrees.  Uncover and cook 10
more minutes until cheese is bubbly.   Serve with salad and hot bread and butter.  Enjoy!

Chicken Casserole
Ingredients:
4-6 boneless/skinless chicken breasts
1 bag Peppridge Farm Herb Season Stuffing
Monterey Jack Cheese
1 can cream of chicken soup
1/2 cup white cooking wine
1/2 cup melted butter or olive oil
Preparation:
Place chicken in Pyrex and on each piece place a slice of jack cheese.  Pour sauce (made with soup and cooking
wine) over top of chicken and cheese.  On top of that sprinkle 1 bag of stuffing and pour butter or olive oil over
that.  Bake at 350 for 1 hour.
Ham and Tomato Mostaccioli (Staci's favorite)
Ingredients:
1/2 stick butter or margarine
1/2 lb. cooked hame (I use a precooked ham steak and cut in bite size pieces)
2 large garlic cloves, minced
2 16 oz can of tomatoes (pre-diced)
2 tsp. basil
9 oz. Mostaccioli noodles
Parmesan Cheese
Preparation:
Melt butter in large skillet over medium-low heat.  Add bite size ham pieces and garlic.  Cook stirring occasionally
for about 10 minutes.  Stir in tomatoes with juice and basil.  Bring to boil.  Reduce heat, cover and simmer for 45
minutes - stirring occasionally.  Pour tomato sauce over pasta in serving dish.  Toss to mix well.  Sprinkle with
cheese and serve with spinach salad and garlic bread
Tuna and Chips (appetizer)
Ingredients:
1 can cream of mushroom soup
1/2 cup of milk
1 can (6 1/2 oz.) tuna, drained
1 1/4 cup crushed regular potato chips
Preparation:
Mix soup and milk in ungreased 1 quart casserole dish.  Stir in tuna and 1 cup of crushed chips.  Sprinkle with
remaining chips.  Bake uncovered at 350 for 25 minutes
Honey Baked Chicken
Ingredients:
1 1/2 - 2 lbs. cut-up chicken
1/2 cup melted butter or margarine
1/2 cup honey
1/4 cup prepared mustard
1 tsp. salt
1 tsp. curry powder
Preparation:
Place chicken in shallow baking dish skin side up.  Combine butter, honey, mustard, salt, curry powder and mix
well.  Pour over chicken.  Bake 350 for 1 1/4 hours.  Baste every 15 minutes
Yummy Meat Loaf
Ingredients:
1 1/2 lbs. ground hamburger
1 cup cracker crumbs (I use saltine)
1 1/4 cup milk
1 egg
1 small onion, chopped
1 Tbsp. Worcestershire sauce
1 1/2 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper
1/4 tsp. ground sage
1 clove garlic, crushed
Preparation:
Mix all ingredients in large bowl.  Spread in ungreased loaf pan.  Bake at 350 for 1 1/2 hours
